Pork Wellington Stuffed with Apricots & Cranberries is the third of the three cooking demos I held in Melbourne recently with Murray Valley Pork, as part of their Summer Tastes event.

I created this recipe for Christmas, but with layers of flavour including fruit, mushrooms, prosciutto, pastry and of course pork tenderloin, it’s a dish that’s fitting for any special occasion.  View the recipe here and watch the cooking demo below.
