Dark Chocolate Mousse

I’ve made this decadent dessert so many times since I was an apprentice chef that I can whip it up with my eyes shut! I like to serve it with crisp palmiers, they make a perfect counterpoint to the silkiness of the mousse. It’s hard to go wrong when making this recipe, just make sure to use a good quality chocolate — it is the hero of the dish!
